Tamba Las Vegas has launched The Bar at Tamba, introducing a new cocktail menu organized by emotion and inspired by Indian ingredients. The program debuted August 1 at the James Beard finalist restaurant in Town Square.
Tamba Las Vegas, a 2026 James Beard Foundation Award finalist for Best New Restaurant, has introduced a new cocktail experience with the opening of The Bar at Tamba. The program, which debuted August 1 at Town Square, is led by Director of Bar and Spirits Sean Santos and aims to redefine how guests approach cocktails in Las Vegas.
The new menu, titled The Journey, organizes 24 cocktails by six emotions—Renewal, Joy, Curiosity, Passion, Confidence, and Celebration—rather than by spirit or traditional style. Each drink draws on ingredients from across India, including curry leaf, tamarind, saffron, ghee, thandai, rose, and masala chai, reflecting Tamba’s contemporary Indian culinary perspective.
How the Menu Works
Instead of choosing by base spirit, guests are encouraged to select cocktails based on the experience or feeling they seek. According to Santos, the goal is to create memorable moments rooted in emotion, with each drink crafted to evoke a specific response. The menu was developed over a year and represents an evolution in Tamba’s approach to hospitality and bar service.
The Journey features 24 cocktails divided into six chapters, with 10 seasonal selections that reinterpret classic drinks through Indian flavors and techniques. Notable highlights include:
- Panipu-Rita: A margarita inspired by pani puri, featuring house spice water with Kashmiri and bird’s eye chili, micro cilantro, and dried chili.
- Tamba-Tini: A martini reimagined with curry leaf and lemon, offering a clean, briny profile.
- Touch of Tamarind: Barrel-aged cachaça, fino sherry, and tamarind, blending wood, tang, and dark chocolate notes.
- Thandai Colada: A piña colada variation using thandai, a festive Indian drink associated with Holi.
- Amrood Cloud: Street guava topped with house-made kulfi cream.
- Banana Halwa: A tribute to the Vieux Carré, featuring in-house “Banana-Ghee Bourbon” inspired by Indian banana halwa.
Behind the Bar
The bar team consists of four bartenders and two apprentices, all trained in classic cocktail techniques. Santos emphasizes ongoing education and team ownership of the program, aiming to guide guests through each experience with confidence.
The Bar at Tamba extends the restaurant’s reputation as a destination for contemporary Indian cuisine and innovative hospitality. Later this summer, Tamba plans to introduce The Atlas of Elixirs, a dedicated spirit-free cocktail menu.
