Jeanette Davis is putting her thirty years of restaurant development experience to work on a new project for Las Vegas. Davis, who remains Senior Vice President of Food for LV Petroleum as of September 2026, has signed a multi-unit agreement to bring Mellow Mushroom—the Atlanta-based pizza franchise known for its creative pies and quirky interiors—to Southern Nevada. The first location will open in Henderson. According to a September 2026 company report, Davis continues to play a central role in LV Petroleum’s national food expansion and Las Vegas market strategy.

For Davis, this is a personal milestone. She calls the project the “Super Bowl” of her career, the result of years spent building and running restaurants across the country. When her previous employer stopped opening new restaurants and began selling locations in 2022, Davis had to decide whether to leave the industry or double down. She chose to stay, joining two partners in Las Vegas to build a new food-and-beverage portfolio. At LV Petroleum, she has led franchise growth for several brands, including the recent opening of Bojangles’ first Las Vegas location with a full bar inside The LINQ, as reported in a September 2026 interview.

Why Mellow Mushroom is Coming to Las Vegas

Mellow Mushroom’s move into Las Vegas is intentional. Davis saw an opening for a brand with a strong personality and a focus on community—qualities she believes are important in a city built on hospitality and entertainment. The franchise’s hand-tossed, stone-baked pizzas and art-filled spaces seemed like a good fit for local tastes and the city’s appetite for something different.

“Mellow Mushroom stood out to me because it’s not just another pizza concept,” Davis said. She points to the brand’s mix of pizza, bar sales, dine-in, takeout, and catering as a model with room to grow in Las Vegas. The ability to give each location its own local character, while following a proven playbook, was a major factor in her decision. Davis’s broader strategy matches LV Petroleum’s multi-brand food portfolio, which has added several new food-service brands in 2026, further expanding the company’s reach.

Inside the Henderson Launch

The first Mellow Mushroom under Davis’s leadership will open in Henderson, marking the brand’s debut in the Las Vegas Valley. An exact opening date has not been announced, but Davis and her partners are preparing to introduce the franchise’s signature menu and atmosphere to a new audience. Each Mellow Mushroom is locally owned and designed to reflect its community, a model Davis believes will work well in a market where individuality and guest connection matter.

Davis takes a hands-on approach. She focuses on operational discipline, financial performance, and building strong teams—skills she developed managing food safety, compliance, and menu development for more than 226 restaurant brands nationwide. Her philosophy: take a restaurant from concept to opening, and then keep it running well.

Davis says owning a Mellow Mushroom franchise is not just about following a script. The brand provides a tested playbook, but she stresses that success depends on execution—location, leadership, staffing, training, and consistency. “The brand gives you the playbook because its concepts are proven, but the franchisee still has to execute it,” she said. Her advice to future operators: know the economics, spend time in the restaurants, and make sure you believe in the brand before signing on.

Davis first tried Mellow Mushroom in 2008 at Clemson University and has followed its growth ever since. Now, she sees a chance to introduce the brand to a region where it has no presence, using her experience to build something new in a competitive market.

Las Vegas Restaurant Scene Keeps Changing

Mellow Mushroom’s expansion into Henderson is part of a broader trend in Las Vegas dining, as established operators look for brands with both national recognition and local flexibility.
