Lilli opened on Spring Mountain Road with four- and eight-course menus priced at $98 and $188 per person. Chef Tyler Vorce brings experience from The French Laundry and kitchens in France to Las Vegas Chinatown.

Live scallops flown from Penobscot Bay are shucked to order at Lilli. The opening menu serves them with avocado mousse. White sturgeon caviar accompanies the dish, finished with a horseradish and sour apple granita.

The restaurant opened Thursday, October 8, 2026, at 3616 Spring Mountain Road, Suite 101, in the former Le Café Central French bakery. It is Vorce’s first permanent restaurant after nearly a year of pop-ups and collaborative dinners. He also held a residency at Durango Social Club. Lilli is named for his three-year-old daughter.

Seasonal cooking with local ties

Vorce, 37, grew up in southern Maine, about an hour from the scallops’ source. Before moving to Las Vegas in 2024, he worked in professional kitchens, including The French Laundry. He has said he wants to preserve the scallops’ sweetness and tenderness. Sourcing takes regular effort: he drives to the airport two to three times a week to collect shipments. Green Life Produce in nearby Pahrump supplies fruit picked the morning it is delivered. The farm also provides vegetables and herbs.

Other ingredients come from within a short drive of Las Vegas. Flannery Beef supplies dry-aged flat iron steaks. China Ranch Date Farm provides dates used to finish chestnut and kale tortellini.

Vorce’s menu takes cues from French cuisine without reproducing classic dishes. His version of sole Véronique pairs the fish with Concord grapes. Tender lettuces accompany it, while a sesame-brown butter emulsion replaces the traditional creamy white wine sauce.

Two tasting menus and a lounge

Guests can choose a four-course tasting menu for $98 per person or an eight-course menu for $188. Both follow a loose French progression: the meal starts with an amuse-bouche, then moves to salad. Fish follows before the meat courses, with dessert at the end. Hawaiian kanpachi and black cod, both featured during Vorce’s Durango Social Club residency, are also on the opening menu.

A separate lounge serves à la carte food. Cocktails and wine are available there for a less formal visit. The dining room has an exhibition kitchen and white curtains. Arched panels with floral patterns complete the room, which contrasts with the busy Taco Stand next door.

Vorce’s Durango Social Club residency came before Lilli’s opening. Separately, Durango food hall changes provide a snapshot of restaurant turnover at the resort.

Wine and opening details

Lilli’s compact wine list emphasizes French and California producers. One pairing Vorce favors is a 2023 “Cep” Pinot Noir from Peay Vineyards with Liberty duck breast aged for two weeks. The dish comes with jujube purée and roasted radicchio, plus a foie gras-Port sauce. The list also includes a $500 white Burgundy from Domaine Pierre Morey. A $175 2024 Savoy Vineyard pinot noir from Littorai is another option.

Lilli is at 3616 Spring Mountain Road, Suite 101, Las Vegas. It serves dinner Tuesday through Saturday from 5:30 p.m. to 9:30 p.m. Reservations are available through Resy.
